川菜系列之干妈回锅肉

口味独特，色泽红亮，肥而不腻，入口浓香的回锅肉，作为一道传统川菜，一直被认为是川菜之首，川菜之化身。制作这道菜要选用五花肉或者猪后臀二刀肉，煮熟后切成大薄片，然后搭配青辣椒或者青蒜苗等辅料，佐以郫县豆瓣，豆豉等调味料，二次回锅炒制成菜，故得名回锅肉。

福禄的干妈回锅肉，由我们的厨师们精选半肥半瘦的五花肉，用豆瓣酱，豆豉, 葱姜蒜，辣椒来调味，经过回锅煸炒，亮晶晶油汪汪的肉片都蜷缩成了灯盏窝状，仿佛可以盛得住一窝油。煸炒后的青椒表皮微皱，吸收了五花肉的油脂，肉片蒜香酱香十足，有浓厚的爆炒味道。吃一口，麻辣鲜嫩脆!
