Different from most Chinese restaurants in the Netherlands, we do not offer extensive taste-modified Chinese or Asian dishes, or even a hybrid between Indonesian cuisine and Southern Chinese cuisine. We specialize in serving the most authentic Sichuan dishes. Authenticity itself is a great feature. Sichuan cuisine is currently the most popular among the eight Great Chinese cuisines. But What is Sichuan cuisine? Sichuan dishes are most famous for the liberal use of spicy chilli (là, 辣) and numbing Sichuan peppercorns (má, 麻), which leave the palate tingling and uplifted. However, Sichuan cuisine is so much more than spice. It boasts a depth of flavour, using lots of aromatics like ginger, green onion and garlic, several types of fresh/dried/pickled chilli, preserved vegetables, and cooking wines – and everything is always balanced.
